Belgian Gookie Dough Waffles Recipe

If you love starting your day with a breakfast that’s  a little more decadent than eggs on toast or a bacon sandwich, you’ll love these amazing sweet waffles!

(Especially when you top them with chocolate or classic whipped cream). 

You will need: 

For the cookie dough:

For the Waffles:

  • 240g plain flour
  • 2 tsp baking powder
  • 1 tsp bicarb soda
  • ½  tsp salt
  • 2 eggs (lightly beaten)
  • 280ml buttermilk
  • 110g unsalted butter (melted and cooled) 
  • 50g caster sugar
  • 1 tsp vanilla extract

Cookie Dough Waffles

Directions:

Refrigerate the Gookie Dough until ready to cook waffles.

To make waffles, sift together the flour, baking powder, bicarb soda and salt. 

In a separate bowl, lightly whisk eggs. Whisk in buttermilk, melted butter, sugar and vanilla. Add dry ingredients and stir until just combined.

Preheat the waffle maker and lightly coat with cooking spray or brush with vegetable oil. 

Ladle a heaping 120ml of batter onto iron and quickly drop 6 to 7 marble-size balls of Gookie Dough on top. Close the lid and cook according to the manufacturer's directions, until golden brown and toasted.

Serve.
