We're going to take it to the next level this Tuesday and try our very hardest to support that healthy eating, so you get that summer body that you're trying to achieve (we all know the feeling and understand the difficulty). So, the struggle is real when you adore cookies, cookie dough and anything in between which is why we have written a recipe which may make your week. No-bake cookie dough protein bars! As easy as 1,2,3, you're just combining all the ingredients together, and you're done! The baking soda in the recipe helps trick your mind into that cookie texture, and cashew butter is a cookies best friend! If you want to switch it up and use peanut butter, then be my guest.

You will need:

565g oats flour 

170g of Vanilla Bean Protein Powder (or vanilla plant-based protein powder of your choice)

1/4 tablespoon of salt 

1/4 teaspoon of baking soda 

115g of pure maple syrup 

115g of cashew butter (or almond butter)

60ml of almond milk 

One teaspoon of vanilla extract 

For the chocolate topping:

175g of chocolate chips 

One tablespoon of coconut oil 

One tablespoon of cashew butter 

Sea salt to decorate (optional)

Firstly, line an 8-by-8-inch square baking tray with parchment paper. Place oat flour, protein powder, salt and baking soda into a large mixing bowl. Stirring to combine fully. Add the maple syrup, cashew butter, almond milk and vanilla. Stir until a doughy-like texture forms. 

Using wet hands, press the mixture evenly into the lined tray. Make your chocolate topping by placing your chocolate chips, coconut oil and cashew oil in a medium bowl. Microwave for about a minute with 20-second intervals until melted thoroughly. Pour the chocolate over the bars and use a spatula to spread evenly. 

Freeze for 2 or more hours and then slice into 9-12 bars. Top with sea salt and enjoy!

Deliciously gorgeous, surprisingly healthy! Make snack time more healthy with extra flavour. If you're thinking, where's the Gookie Dough at, then feel free to add little balls into the mixture or top with Gookie Dough instead, it won't be super calorific so don't worry!
