Coca-Cola Cake

Weird and wonderful things occur on this blog and this recipe is one that you may turn your nose at. I guess you could say 'don't knock it until you try it', but we aren't quite sure. Coca-Cola cake is certainly a new one.

You will need (for the cake)
400g of sugar
400g of all-purpose flour
75g of mini marshmallows
115g of butter
118ml of vegetable oil
Three tablespoons of cocoa
235ml of Coca-Cola
One teaspoon of baking soda
120g of buttermilk
Two eggs
One teaspoon of vanilla extract
For the frosting
115g of butter
Three tablespoons of cocoa
Six tablespoons of Coca-Cola
One box of icing sugar
One teaspoon of vanilla extract
125g of chopped pecans

Preheat the oven to 180 degrees Celcius and in a bowl, sift the sugar and flour, adding the marshmallows in gradually. In a saucepan on a medium heat, mix the butter, oil, cocoa and Coca-Cola, bring it to a boil and pour over the dry ingredients. Blend well.
Dissolve your baking soda in the buttermilk before adding to the batter along with the eggs and vanilla extract. Mix well until all of the ingredients are well combined and a batter has formed. Pour into a 9x13 inch baking pan and pop in the oven for 35-45 minutes. Remove from the oven and frost immediately (at least you don't need to wait around for cooling!).
To make the frosting, combine butter, cocoa and the Coca-Cola in a saucepan. Bring to a boil and pour over the icing sugar, blending well. Add your vanilla extract and chopped nuts. Spread over the warm cake and then cut when cool. *Recipe from Cookies and Cups*
