Cookies and Cream Doughnuts
Thursday is the new Friday which means we're in need of all things glitter and cookies and cream doughnuts! Hello, puff pastry, oh how we need you in our lives. Could this week go any slower?! Are you kick starting your day by pulling a sick one during this horrendous weather or are you battling your way through the avalanche?!
You will need:

Vegetable or coconut oil for frying
Four sheets of puff pastry
One egg, lightly beating
225g of icing sugar
55g of heavy cream
2 to 3 tablespoons of milk
1 and a half teaspoons of vanilla extract
1 or 2 packets of sandwich cookies (Oreos if preferred)
Heat 3 tablespoons (or more if needed) of oil over a medium to low heat in a large pan which has a thermometer. The oil needs to be around 350 degrees, nothing higher!

Take your sheets of puff pastry and cut them into thirds. Brush one side of the cut piece with beaten egg and place the second piece on top. Brush this with the beaten egg also. Now put the third piece on the top. Press down on them gently, so they stick together and do this with the remaining sheets. There should be four rectangles with three layers each.
Using a biscuit cutter, cut holes in each stack, you can get three doughnuts from each. Cut a hole in the centre (an apple corer works best). Fry your doughnuts two at a time until they are golden, place on kitchen roll to drain and repeat for all.

Glaze time! Whisk sugar, cream, milk and the vanilla extract and stir until it is smooth. If it appears very thick then add more milk and if it's too runny add more sugar! Dip each doughnut in the glaze and sprinkle with crushed cookies. GORGEOUS! Move over, Krispy Kreme.
