Espresso Chip Gookie Dough Ice Cream

Do you know what’s better than ice cream? 

The answer, obviously, is Gookie Dough ice cream.

But what if we told you that there’s something that you may find even better than a Gookie Dough Ice Cream?

Well, we’ve found this... 

It’s called Espresso Chip Gookie Dough Ice Cream.

The ice cream base is flavoured with espresso. Not too strong, it has just the right amount to give you that distinct, refreshing coffee flavour.

If you want to get more buzz from your ice cream (yes, it can actually wake you up!), we’d recommend adding 1 full teaspoon of espresso powder (instead of just ½ teaspoon).

You will need: 

FOR THE COOKIE DOUGH:

FOR THE ICE CREAM:

  • ½  tsp espresso powder
  • 3 tsp hot water
  • 710ml double cream
  • 150g of sugar
  • 1 tbsp pure vanilla extract

    Directions:

    FOR THE ICE CREAM:

    1. Pre-freeze your ice cream maker attachment as directed, usually for at least 15 hours.
    2. Combine ½ tsp of espresso powder with 3 tsp of hot water. Stir until powder is dissolved.
    3. Heat 240ml of double cream with 150g of sugar and brewed espresso. Heat in a pot over medium heat, stirring just until it starts to bubble and sugar is dissolved.
    4. Let mixture cool for a few minutes and add the remaining 470ml of heavy whipping cream and vanilla extract. Refrigerate until completely cooled. 

    FOR THE COOKIE DOUGH:

    1. Use a food processor to chop up espresso beans into small crumbs.
    2. Mix the Gookie Dough in with the chopped espresso beans. Set dough aside until you are ready to make the ice cream. No need to refrigerate.
    3. Set up the ice cream maker and spin on low speed. Pour double cream mixture into the ice cream maker while it’s spilling. Stir on low speed for 10 minutes and then increase to medium speed.
    4. During the last two minutes of mixing, add small balls of the Gookie Dough into the mixture. Save about 120g of dough.
    5. As you spoon the ice cream into your container, break up leftover Gookie Dough and add throughout the ice cream.
    6. Return to the freezer for 2-3 hours until desired consistency.
