Gookie Dough Doughnuts Recipe

This week, we’re up for Chocolate Gookie Dough Doughnuts. 

That’s right! It’s our very own low-sugar variation of beloved Doughnuts. 

You will need: 

For the donuts:

  • 50g ground almonds
  • 2 tbsp coconut flour
  • ½ tsp bicarb soda
  • ¼ tsp salt
  • 2 tbsp cocoa powder
  • 1 tbsp Truvia baking blend
  • 3 tbsp chocolate protein powder
  • 2 eggs
  • 1 tsp vanilla extract
  • 240g Greek yogurt (plain)

For the cookie dough:

For the chocolate glaze:

  • 60g sugar-free maple syrup
  • 2 tbsp cocoa powder
Cookie Dough Doughnut

Directions:

Preheat the oven to 150 degrees Celsius. In a large bowl, combine the ground almonds, coconut flour, bicarb soda, salt, cocoa powder, Truvia baking blend and protein powder. 

In a separate bowl, whisk together the eggs, vanilla extract and Greek yogurt. Pour the wet ingredients into the dry ingredients and mix thoroughly.

Transfer the mixture to a ziplock bag and cut off one of the corners to create a piping bag. Pipe the mixture into 8 separate cavities of a greased donut pan. 

Bake for 12-15 minutes or until a toothpick inserted into a donut comes out clean. Allow cooling slightly.

While the donuts are baking, roll the Gookie Dough into 8 separate balls and set aside (this process is much easier if hands are slightly wet).

In another bowl, combine the maple syrup with the cocoa powder and spread the glaze over each donut. Add a Gookie Dough ball to the centre of each donut and enjoy!
