    Red Velvet Gookie Dough is our go to this festive season, with the vibrant red screaming Christmas. But what if you want a baked red velvet cookie? Look no further as we're here to save the day with these crimson cream cheese stuffed delights. Yes, that's right, they're stuffed with goodness! 

    The Steps 

    The process is relatively straightforward. First of all, you need to prepare and chill the red velvet cookie dough, you then go onto making the cream cheese filling. Next, you drop spoonfuls of the mixture onto a baking sheet and freeze. Once frozen, you pop the spoonfuls of filling onto your dough balls. Then, of course, you need to assemble them and bake! Voila. 

    The Dough 

    To make the cookie dough, you'll need cocoa powder (26g), flour (185g), egg (1 large), milk (1 tablespoon), brown sugar (100g), caster sugar (200g), butter (115g) and vanilla extract (2tsp). Of course, don't forget the red food colouring (1 tablespoon)! This compares to chocolate cookie ingredients, but the only difference is you're reducing the cocoa powder to more flour! It's important to remember that red velvet is way more special than the famous quote 'it's just an ordinary mixture which is dyed red.' NO! It should be a blend of cocoa and vanilla which is also very buttery. 

    The Filling 

    To make the cream cheese filling, you'll need cream cheese (112g), icing sugar (210g), flour (1tablespoon) and vanilla extract (1/2 tsp). Simply beat the ingredients together until it's smooth and creamy. Simple right? 

    To ensure that the filling is within the middle of the cookie, take one small red velvet cookie dough ball, pop a smaller amount of cream cheese filling on top and then place another ball of cookie dough at the top to create a sandwich like an effect. Squish together gently to make a flat cookie shape and roll in caster sugar to add a bit of sparkle. After all, it is December tomorrow. 

    Top Tips 

    Vegan? Lactose intolerant? I've got your back! Any milk of your choice should work just fine! Don't like the thought of using red food colouring? Try using beet powder instead, this is a natural alternative and will still give the same result. Use two teaspoons for a gorgeous ruby red. If the filling or cookie dough is too soft while assembling, then just pop into the fridge before trying again. Do not panic!
