    We can dream it's summer, right? Ice cream and lollies are for all year round in our opinion, and it's technically summer if you sit in front of your fire in shorts and sunnies. Hopefully, the weather magicians will hear us calling for the warm months after we write about how to make cookie dough popsicles. Damn, sounds good. This gem of a recipe takes a couple of minutes to prep, has just five ingredients and you just need to let the freezer do all the magic. Perfect for your kids!

    You will need: 

    2 1/2 cups milk (dairy, almond or any of your choice)
    2/3 cup light brown sugar, packed
    1/8 teaspoon fine sea salt
    Two teaspoons pure vanilla extract
    1/4 cup + 1 teaspoon mini chocolate chips
    Ice lolly moulds 

    What to do: 

    Place your milk in a microwave-safe bowl and heat for a minute or until it is quite warm. Stir in your brown sugar and salt until it has dissolved and add in the vanilla. Next, place half a tablespoon of chocolate chips into the bottom of the popsicle moulds. Fill the moulds to the top with your mixture, insert the sticks and freeze until they're solid. This will vary depending on your freezer, but we will recommend at least 4 hours.

    Pro tip: 

    If you want to get super snazzy, use mini pieces of Gookie Dough at the end of your lolly.  This is an alternative to chocolate chips! Saves having cookies and milk because it's all in one place with minimal effort, yay!
