  • Cookie Dough Peanut Butter Cups

    The nation has recently found a new favourite when it comes to chocolate treats and that dear friend would be Reese's. Yes, the peanut butter cup trend has hit us hard, and we aren't complaining because we're in love with the hard chocolate coating which melts on your tongue and the gorgeous creamy peanut butter that tingles your taste buds and gives you a burst of sweet but savoury deliciousness. So, why not combine that idea with the joy of cookie dough which you all know well. Hello, cookie dough peanut butter cups!

    You will need:

    Makes 24 peanut butter cups 

    562g of milk chocolate chips 

    115g of unsalted butter 

    75g brown sugar 

    One teaspoon of vanilla extract 

    55g of peanut butter 

    170g of icing sugar

    Two tablespoons of all-purpose flour 

    1/4 teaspoon of salt 

    65g of mini chocolate chips 

    Directions

    In a saucepan, melt the butter, keep this on the heat and add your brown sugar and whisk until it's dissolved. Let it bubble for 1-2 minutes, then remove from the heat and whisk in your peanut butter. The liquid should be quite runny. Add the vanilla extract and let cool completely. This should take about half an hour.

    Line a mini muffin tin with cake liners and melt half of the chocolate chips in the microwave until fully melted. Pop a teaspoon of chocolate into each mini case and use a pastry brush to brush chocolate up the sides of the case. Place in the freezer for 30 minutes, so it sets. At this point, the butter and sugar mixture should be cooled so whisk in your icing sugar, salt, flour and combine until nearly smooth. Fold in the mini chocolate chips and pop in the fridge to harden (for about 15 minutes).

    Remove the muffin tin and cookie dough and place one teaspoon of cookie dough into the chocolate cups (you could use Gookie Dough instead and mix peanut butter with it! We'd suggest using our classic ordinary flavour!). Place in the freezer for 10 minutes. Melt the rest of the chocolate chips and then cover each cookie dough cup with chocolate, smoothing over with a spoon. Freeze for a final time. 

    Ensure that you store these in the fridge to avoid melting, however, leave out before consuming because they are divine at room temperature!

    So, we can eat all 24 in one sitting, not that we're making a competition out of it or anything...! Now, I completely understand that our body needs all these healthy leafy greens but for today, I'm just going to eat these for lunch. Living life to the fullest, right? And if I feel sick? Who cares, I am the peanut butter cup queen!
