  • No-Bake Peanut Butter & Gookie Dough Truffles

    The endless love for Gookie Dough. We have upped our game with this recipe and decided to make things a little bit fancier. Seeing as the weather hasn't been entirely on our side, we thought we'd get sassy and show off our baking skills. These no-bake peanut butter and Gookie Dough truffles melt in your mouth and are absolute perfection. But don't worry, we won't tell anyone their no-bake!

    You will need:

    One monster tub of Gookie Dough 

    One jar of peanut butter of your choice 

    175g of chocolate in your choice 

    Two teaspoons of coconut oil 

    65g of salted roasted peanuts

    Line a baking tray with parchment paper which will fit into the fridge. Scoop out heaped teaspoons of Gookie Dough and your peanut butter and roll together into balls between the palms of your hands. Put the balls on the tray and cover. Pop into the fridge for 30 minutes or so. 

    When the cookie dough balls are nearly finished chilling, melt the chocolate and coconut oil together in the microwave for 30-seconds. Heat and stir until almost all of the chocolate is melted but being careful not to burn. 

    Place the chocolate in a shallow bowl for dipping the truffles. Chop your peanuts roughly and set them by the side of your set up. Remove the cookie dough balls from the fridge.

     Using a fork, dip the balls of cookie dough into the melted chocolate and then gently tap the fork on the side of the bowl to remove the excess. Place each truffle back onto the tray and sprinkle with chopped peanuts. Once all the truffles are dipped and sprinkled, set for another 30 minutes in the fridge and then serve.  

    Yes, you shall bring that sass and class to the dinner table, and we can't blame you because these are divine.  A pro tip could be to wrap these in cute gift wrapping and box to make a perfect treat for any occasion. After all, you need to show off those baking skills, and you can impress! Perfect for a buffet, Mother's Day, birthdays and just to treat yourself. You deserve it!
