  • Easter Egg Cookie Dough Truffles

    The bank holiday is just around the corner (an extra day off, yay!), along with the major chocolate feast and we can't wait. But how about we mix up tradition slightly and stick with the theme of cookie dough, you know because it's way better and still includes chocolate chips! These Easter Egg Truffles are perfect for your kids, and your mini Easter hamper, or you can keep them all to yourself. You've been warned; they're highly addictive. Truffles can be terrible when it comes to dipping them in icing, however, don't worry, they dip amazingly well and don't break apart. If you're not the best drizzler, try practising your skills on some parchment paper before you go for it, so you know that the chocolate is thin enough! I'll just get into it, shall I?

    You will need:

    115g of butter

    150g of packed brown sugar 

    260g of all purpose flour 

    Two teaspoons of vanilla extract 

    400ml of sweetened condensed milk 

    175g of mini chocolate chips 

    Pink, blue, purple and white candy melts (available at Hobbycraft, Lakeland etc.)

    Firstly, cream the butter and brown sugar together until light and fluffy and beat in the vanilla extract. Add the flour, scraping down the sides when necessary. 

    Then set the mixer on a lower setting and add the sweetened condensed milk. You may need to stop the mixer to scrape down the bowl thoroughly. Once this is thoroughly combined, add in the chocolate chips and stir. 

    Form the dough you've just made into medium sized balls (about 1 inch) and then shape them into eggs. Place on parchment paper, wrap with clingfilm and place to chill overnight. 

    Next, melt the candy melts according to the directions on the bag. Keeping the truffles in the fridge, make sure you remove 2-3 at a time and dip them in the candy melts one at a time with a fork. Gently tap off any excess paper and pop back onto parchment paper.

    These are probably the best Easter treat we've ever created. Sorry chocolate eggs, but you're hollow and dull. Move over, Cadbury, because Gookie Dough is in town. Another idea would be mixing in peanut butter to your dough because this makes the recipe have a Reese's Cup kind of effect which is something we all love. Peanut butter is so underrated! Happy Easter Cookie Monsters!
