Blueberry Cobbler with Gookie Dough Crust Recipe

Today’s recipe co-star will be blueberries. 

Some say Blueberry Cobbler with Gookie Dough Crust is a match made in heaven and couldn’t agree more! 

Scoops of gooey, egg-free Gookie Dough are placed over the juicy blueberry filling to create an amazing golden cookie crust! 

You can make it with both fresh or frozen blueberries.

You will need: 

For Cookie Dough Crust:

For Fruit Filling:

  • 800g fresh or 700g of frozen blueberries
  • 2-3 tsp corn flour (depending on how juicy you like it)
  • 100g sugar
  • 1/2 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1 tsp lemon juice

Cookie Dough Blueberry Cobbler

Directions:

To prepare blueberry filling, combine all ingredients in a bowl to use in the cobbler recipe.

Preheat the oven to 190 degrees Celsius. 

Place fruit mixture into an 8-inch square baking pan or 9-inch round deep-dish pie plate. Drop Gookie Dough topping evenly over the fruit mixture.

Bake until golden brown (45-55 minutes). Place a piece of tin foil over the cobbler if Gookie Dough gets too brown before it's finished baking. 

Serve warm—pairs well with vanilla ice cream or whipped cream.
