Jam Doughnut Mug Cake

Instagram worthy, super duper cute and looking too good to eat. These jam doughnut mug cakes are adorable and scream Homer Simpson vibes along with sprinkle magicalness explosions.

Ingredients 

230g of self-raising flour 

230g of plain flour 

250ml of milk 

230g of caster sugar 

125g of unsalted butter which is melted and then cooled 

One teaspoon of vanilla essence

Four teaspoons of raspberry conserve 

Sprinkles for decoration 

For the doughnut glazing: 

125g of pure icing sugar which is sifted 

25g of unsalted butter which is softened 

One tablespoon of milk 

Pink food colouring

In a bowl, whisk together self-raising flour, plain flour, milk, sugar, the melted butter and vanilla until well combined. Divide the mixture evenly between four 200ml microwave safe mugs. Arrange the mugs on the microwave plate and pop the microwave on high for three minutes until the cake is cooked and a skewer comes out clean (If using a small microwave, cooking in two batches may be needed). Let cool. 

Using a 2cm round cutter, cut a 5cm deep hole in the middle of each cake. Dollop one teaspoon of raspberry conserves into each hole. In a heatproof bowl over a saucepan of simmering water, combine the icing sugar, butter and milk and stir until it's glossy. Pop a few drops of pink food colouring into it and pour the icing on top of the mug cake to form the doughnut look. Decorate with sprinkles and let set, then serve! 

And voila! Quirky and so 2018! Looks like it took loads of time but was in fact as simple as 1,2,3! Ready in no time and a great way to impress some last-minute dinner guests, just call us 'Come Dine With Me'! Maybe we should try a cookie version and add Gookie Dough?
